Curriculum development and examiner services

I have been working with City and Guilds for over 20 years. Together, we have created a number of successful projects, developing curriculum for the hospitality and catering industry.  I have also provided sevices as a Principal Examiner and Moderator. I am an honorary member of City and Guilds and received an Award of Excellence for my contribution to the development of the Diplomas in Professional Cookery.

Royal Academy of Culinary Arts

Curriculum development, apprenticeships, education

I have been an Academician of the Royal Acadeny of Culinary Arts for over 10 years. I currently sit on the educaiton committee and assit tin the ongoing development of the Academy's Apprenticeship programme, among other educational developments. I have also supported the Academy's Awards of Excellence as a judge and the development of the Master of Culinary Arts awards.

Harvard University

Culinary Psychology, Havard Extension School

Alongside my colleagues, Professors Stelios Kiosses and Beth Frates, MD., we have delivered the Culinary Psychology programme for three years. The programme has been fully subscribed so far and enrolments are now open for the Spring 2024 cohort.

Le Cordon Bleu, London

External Examiner and Adviser

I am delighted to be working with Le Cordon Bleu as their external examiner for the next four years, starting in September 2023. The quality of the students' practical work is exceptional and the resources at the cookery school are world-class.

We have provided a range of services for Pearson, BTEC, Edexcel (including Edexcel International) for over 15 years, This has included the development of digital learning resources for apprentices through to module writing and development of bespoke modules and programmes for international clients.

T Level Development, Food Science and Nutrition

NCFE approached me to request my input in the development of the T Level in Food Science, which was successfully launched in 2021. I formed part of a small team, writing the curriculum content, assessment methodology, assessment tasks and materials,

I have been honoured to support many of the initiatives developed by IIHM, including the role of Senior Judge at the Young Chef Olympiad and a panellist for various conference topics.

Ninja, USA

Recipe development and new product testing

Ninja, USA, approached me to join a chefs' workshop in their Victoria offices in London. Following this, I was asked to create various recipes and products using a selection of new equipment, including air fryers, pressure cookers, belnders and grills.

Professional Chef Series, Maths and English for Hospitality

I was approached by Cengage following a consultation to become one of the authors for the writing of the Professional Chef series, alongside Gary Hunter and colleagues at Westminster Kingsway College. Professional Chef was the first book I had published as a solo author, the book later being sold around the world and translated into several languages. As a champion for the development of maths and Englishg skills and their importance in the workplace, I was also commisioned to write a book focussed on how these skills are vital to people developing their careers in hospitality and catering.

Hodder Education

Practical Cookery, Theory of Hospitality and Catering, Dynamic Learning (Boost)

I was approached by Professor David Foskett, MBE, asking if I would like to join the writing team for the iconic 'Practical Cookery' and 'Theory of Hospitality and Catering'. I have been part of the writing team for over 15 years, producing several updates of the series over this timeframe. I also contribute to the team producing the digital and interactive learning resources, Boost, formarly Dynamic Learning.

Pheonix Publishing

Firing the Mind - Culinary Psychology

Following the success of the Culinary Psyhology programme at the Harvard Extension School, Harvard University, the team has a contract to write a book to accompany the course. This exciting development is scheduled to be published in 2024. More details to follow.

The Association of Corporate Treasurers

Continuous Professional Development, Qualification levelling

We have assisted the ACT in the development of revised qualifications to ensure that qualifications were written and assessed at the appropriate level. We have also provided CPD for assessors and examiners to ensure consistent standards of assessment across the series of qualifications.

I have been a route panel member for IfATE on the Hospitality and Catering pathway for over 5 years. The group ensures that technical qualification development and apprenticeships are fit for purpose, meeting the needs of the modern industry.

The Chefs' Forum

Staff Development, Continuous Professional Development, Schools Liaison

I developed a professional CPD programme covering a variety of subjects ranging from 'Business Studies for Hospitality Students', through to the use of digital learning platforms, various culinary and hospitality masteclasses and industry discussions. I also hosted a variety of panel debates and promoted the hospitality industry as a potential career to secondary school students via industry liaison sesssions.

We helped Caulys with their promotion and development of their hydroponic growing sytems. Using industry partners, we produced a series of films to launch the system, which is based in France
